They eventually get out of Mordor! 

There's some nice river valley here, and some nice woodlands and then a very nice stretch of coastline, though it's all sparsely inhabited. Alternatively, there's the near tail of the White Mountains, which is much less inhabited despite having a commanding and lovely view of the surrounding countryside (not much food, though, so it's not particularly interesting to the hunter gatherers that live here).

Privacy would be desirable, of course, though not at the expense of eating...

How much food an area contains is something she can fix fairly trivially. 

Ah, yes, Celebrimbor had forgotten for a moment that she was traveling with a Great Power.

Evidently.

To the foot of the mountains, then.

Does she have in mind what changes she wants? 

Minimal ones, at least to start with, so as to preserve the character of the land.

She can cause a few trees to bear fruit for food, then, and perhaps shape a workshop into the mountain? 

That will do for a start.

Any other requests? 

An easily-accessible vein of gemstones and precious metals would be nice.

She'll form one - with a neatly sorted rainbow of every gem Celebrimbor has heard of and a good number she hasn't, as well as some 'gems' that really should not be in veins, like pearls, obsidian, and amber. The precious metals are formed into broad (and pretty) stripes in their own neatly sorted row.

(The other Valar like to follow Eru's vision for a naturalistic world, and normally gemstones and metals are in logical places in long term stable forms that could have formed there naturally. Melkor apparently has her own vision, though, and that vision involves rainbows.)

It is truly fascinating - Melkor's always obtained things directly through the Song, and hers is so powerful that it'd been a question of will and not finesse. She's never crafted, and never cared to spend time watching Aule's ex-followers at their work. 

Somewhat a pity. The practice is one of the purest expressions of skill in the world.

Celebrimbor's performance makes a persuasive argument for that...
